Marzipan & Chocolate Brigadeiro 

If like me, you hate making desserts because YOU HATE BAKING (there, I said it), this one is for you. This was mum’s idea — the chilli jam is easy but requires a little bit of commitment, but this one, you can make between watching episodes of White Lotus when you need a breather to collect your emotions, but your mind is still in Sicily. There’s no baking involved here, and the hardest part is waiting for it to set in the fridge. Also a good cooking activity to get any little kids involved. Recipe: Marzipan & Chocolate Brigadeiro 

Ingredients
1 tin condensed milk 
2 tbsp cocoa powder 
1/2 cup dark chocolate pellets(we used 70%)
50 g marzipan, cut into small squares (optional) 
1 shot espresso (optional) 
25 g butter 
Sprinkles 

Method
Grease a plate with butter and set aside. 

In a nonstick pan, add the condensed milk, cocoa powder, chocolate, espresso and stir to mix. On a low heat, continue stirring until the chocolate melts and the whole mixture thickens. 

Turn off the heat, and stir in the marzipan.

Pour the mixture onto the plate, spread evenly, and refrigerate for 20 minutes. 

When the mixture is firm, it’s ready to be rolled. 

Add the sprinkles to a shallow bowl.

Using a tablespoon, scoop up the mixture and roll into a ball. 

Dip this into the sprinkles and gently roll it about until it is completely coated.

Repeat with the remaining chocolate mixture. 

Refrigerate for another 20 minutes before serving.
