Tropical Iced Latte

Presently in bed with the flu and sipping on my second iced coffee of the day. Sajjad is really good at coming up with iced coffee beverages, and he’s recently been making a Thai coffee, inspired by a version we had at Grind in Goa. Will maybe post that next if you’re interested? 

This Tropical Iced Latte here is me as an iced beverage. There’s coconut, ginger, cinnamon and coffee of course. Brought together with a generous glug of condensed milk. What’s not to love?  

Recipe: Tropical Iced Latte 

Ingredients 
2 tbsp condensed milk (or more!)
1/3 cup full-fat coconut milk (not coconut cream)
1 stick cinnamon 
15 g ground coffee, extra fine 
1 tsp ginger powder
1 tsp cinnamon powder 
Ice

Method
When making the coffee in a moka pot, add the ground ginger and cinnamon powder after the coffee powder and brew. For full instructions on brewing coffee in a moka pot, read here

Next, hold the cinnamon stick to a flame for a few seconds. When it starts smoking, place it under the glass you’re going to use for your coffee. This infuses your glass with a delicate smoked cinnamon flavour. 

Meanwhile in a jar, add the condensed milk, coconut milk and using a frother (here’s the one we use), blend until combined and a little frothy. Alternatively, you could do this step in a blender. 

Fill your glass with ice, pour in the coconut milk and condensed milk, followed by the coffee, stir and enjoy!
